From cow to corn with Gilboa’s Knueven Creamery

GILBOA — Knueven Creamery and Market is Gilboa’s 207 Main St recently. Opened in.

On Tuesday, the Ottawa Regional Chamber of Commerce held a ribbon cut for business.

The owner, Nate Knuben, has high expectations for the store in a small village in Putnam County.

“This was once a little red bakery. She was one of our customers when she was open,” Knueven said. “When space became available, we knew they took good care of it. It was a good place to get started, and most of the time it was almost turnkey.”

This business is part of a larger trend for farmers to sell directly to consumers.

“We have moved our farming practices towards more regenerative agriculture wherever possible,” Knueven said. “We are still working on it. We are trying to make it successful and help the entire agricultural community grow as much as possible, but in addition we are good locals here at home. We help people understand that they can get the product. “

Laurie Knueven manages a store that offers dairy outlets.

“We’ve been doing this since 2018, including farmers markets and home delivery,” she said. “It was just time to start the storefront. The farm and creamery area were a little bigger and we needed a place to make ice cream, so there’s a professional kitchen behind here. We make all the ice cream here. “

The immersion cabinet has a minimum of 10 flavors, and the freezer available for purchase has even more.

As fresh as ice cream.

“We use the phrase cow to cream, corn,” she said. “… Dairy products come from our cows, so boys can milk their cows. The next day, we can use it to make ice cream, so it’s fresh.
